Mushrooms: healthy and in season!

Its finally springtime, and great, nutritious foods have come in season, including mushrooms! Foods in season tend to be better-priced at the market and their nutritional content is typically better. Focusing on mushrooms, one could really benefit from adding this to make a well-balanced diet. Did you know: mushrooms are one of the few, if not the only, foods that act as human skin in that they can actually absorb the sun's ray for synthesizing vitamin D!!! How cool is that? This fact makes mushrooms one of the better sources for vitamin D, and they're so versatile! Mushrooms are also great for the digestive system, and are rich vitamins and minerals, such as  potassium, riboflavin, and pantothenic acid.

I used to HATE mushrooms, more for the texture than anything, but have really come to appreciate their savory flavor that seems to absorb and mix with whatever they are cooked with. There are so many different varieties, too. My personal favorite are the baby bellas, because of their mild flavor and are frequently used in my recipe for stuffed mushrooms.
