Quinoa & Lentils Bowl

A healthy blend of grain, protein, vegetables, fruit, and dairy. 
 
Ingredients:
1 C Chicken Broth (or vegetable if vegan)
1/4 C dry Quinoa 
1/4 C Lentils
1 diced Roma Tomato
1 diced Avocado
1 T diced Red Onion
2 T crumbled Feta Cheese
1 T freshly squeezed Lemon Juice
1/4 t Garlic Powder or 1 t of minced fresh Garlic 
1 T EVOO

Directions:
Bring broth to a boil. Add quinoa, lower heat, mixing occasionally, and simmer for 15 min. Steam lentils until tender, or purchase them pre-steamed. While quinoa is finishing, mix other ingredients together, add salt/pepper to taste. Mix quinoa with the blend. This dish can be served hot or cold.
